The Lehigh University Pub, a new restaurant located inside the Clayton University Center at Packer Hall, is serving up Lehigh spirit with cleverly named, handcrafted mocktails. The alcohol-free, Lehighthemed sips (shown above from left to right) include the Packer Punch, Eco-Flame Tonic, Engineers “Old Fashion” and The Rally “Spritz.” Each contains complex layers of flavors that range from sweet or bitter to cool and refreshing, said Barbara Toolan, director of marketing at Settlers Hospitality—the company that partnered with Lehigh to create the pub and manages its restaurant operations. The names of the signature mocktails were inspired by the traditions and people synonymous with Lehigh, and Settlers Hospitality CEO Justin Genzlinger ’99 was able to provide that insider knowledge as an alumnus of the university, Toolan said. “It’s our nod to the rich history and beloved events on campus,” she said. The pub plans to feature rotating mocktail specials that utilize the freshest, seasonal ingredients and complement the restaurant’s food offerings, Toolan said.
